When Roast meets Raw

This is a nice combination and easy recipe, especially for the eggplant lovers in the family
We used a hand held spiralizer for the zucchini.
1 eggplant (cut in cubes and roasted)
1 medium zucchini (for spiralizer)
1/2 red pepper
handful pine nuts,
olive oil, 2-3 tsp
salt & pepper. Now taste!
