A colorful and unique salad to make for company.
Serves 6

1 small ripe but firm avocados, peeled and cubed

3 tablespoons lime juice, divided

¼ cup red onions (sliced thin)

1 ripe but firm mango, peeled and cubed

1/2 jalapeño, stemmed, seeded and finely chopped

½ red bell pepper, diced

1 teaspoon grated lime zest

4 tablespoons chopped cilantro, plus more for garnish

¼ cup chopped pistachios for garnish

1tsp raw sugar

Sea salt, pepper to taste

3 tablespoons extra-virgin olive oil

½ cup corn
- 1 (15-ounce) can black beans, rinsed and drained
- 1 (15-ounce) white bean (navy- or other)
Method:
Gently toss red onion with 2 tablespoons of the lime juice in a medium bowl. After 30 min. add mango, jalapeño, avocado and red pepper and gently toss to combine.
Whisk together remaining 1 tablespoon lime juice, zest, cilantro, salt, pepper and sugar in a large bowl. Whisk in oil until thoroughly combined to make a thick dressing. Add avocado mixture, beans and corn and toss gently. Spoon salad onto plates, garnish with cilantro, pistachios and serve immediately.
