Chia seeds are an excellent source of omega-3 fatty acid. They are also an excellent source of fiber at 10 grams per ounce (about 2 tablespoons), and contain protein and minerals including as iron, calcium, magnesium and zinc!
Chia Pudding Recipe
Serves-1-2 people
3 TBS chia seeds (see Living Nutz for organic chia)
1 Cup almond or favorite milk
1 tsp vanilla extract
1 TBS pure maple syrup
Combine all the ingredients in a blender, blend until a uniform texture is achieved. Transfer to a container and allow to chill overnight. Serve with chopped walnuts & blueberries, or any fruit you have, if desired.
